  1. Evaporation to dryness requires long heating; so it uses a lot of fuel. Also the solvent, water, is lost by evaporation. And it is not suitable for obtaining crystals of salts which crystallize with water of crystallization or break down (decompose) on heating.
  2. Sodium chloride traps air as it forms crystals. The air expands on further heating, causing the salt particles to explode.
